Do I have to offer all the sitemaps to Google (for the taxonomys also) or only the main one?

We are glad that you have already managed to resolve the sitemaps issue.
In your Google Search Console account, you can just submit your main sitemap and Google will use that to crawl your other sub-sitemaps.
Also, multilingual plugins like Gtranslate adds hreflang tags to your pages, which helps Google determine that a piece of content is a translation of another post/page.
