Please exclude the sitemaps from caching and remove the sitemaps from the Search Console and submit sitemap_index.xml and wait for Google to crawl the website efficiently.

Google doesn’t index all the pages at once. You should give more time to google to index all the pages for your website. For a new website, it takes time from weeks to months.
I would suggest you be patient, and soon the pages will be indexed.
