The product-sitemap.xml appears to be updated on my end with the latest product added on Feb-07-2021. (Screenshot in sensitive data section)
Can you please share some of the products you added recently that do not appear in the sitemap?
You can also try resaving the Permalinks(without changing settings)
That should fix the issue. Please let me know if that does not. We are here to assist.
