I checked and the sitemap on your website is redirecting the homepage. Please add the below filter to the website:
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

I can see that the sitemap is loading properly now.
Please clear your website’s cache and remove all the sitemaps from your Google Search Console account, and then submit only the main sitemap: /sitemap_index.xml

Further, give Google some time to crawl your website again and see if that fixes the issue.
Google would be able to see the sitemap only once it crawls the website again. So, you’ll need to wait until the website is crawled again.

I have resubmitted this over and over. The sitemaps randomly give errors and are fetched as HTML. This has been happening every 1-3 days.

I checked the sitemap, it is working fine.
The sitemap is also validated without any errors. Check the screenshots in the sensitive data section.
Can you please remove all the sitemaps from the Search Console and add ?sitemap=1 instead of the sitemap_index.xml? It will do the same job as that of renaming the sitemap file.
