The sitemap generated by Rank Math is available in the correct URL which is https://mydomain.com/sitemap_index.xml
The reason you are seeing that another URL redirecting to the homepage is because you had the 404s to redirect to the homepage automatically and since that page doesn’t exist it was doing what you asked it to do.
Now that the default option is selected the URL https://mydomain.com/sitemap.xml will redirect to the correct sitemap URL which is the one mentioned previously.

Upon checking your page’s source, I found that there are duplicate meta tags.

I tried to login into your website’s admin area but it seems like the new login link has also expired.
Duplicate meta tags might confuse the search engines and may result in negatively affecting your website’s SEO or similar issues.

Once you find the plugin/theme causing the issue, disable its meta tags and other SEO-related features and then clear your website’s cache.
Further, wait for Google to re-crawl your website and see if the issue gets fixed.
Do note that if everything’s fine and Google still decides to show a different meta title/description, then there is nothing you can do as Google sometimes ignores the custom meta info altogether and show something from the page’s content that matches the search intent better.

Along with your homepage, this paginated page is also indexed on Google. Further, you can follow the same process, i.e, to clear the website’s cache and wait for Google to re-crawl your website.
