It is completely normal for the sitemap files to be set to No Index since you do not want them to be indexed on SERPs.
The sitemaps are intended to be crawled by the search engines but they are not to be indexed/displayed on the search results and hence the sitemaps are kept as No Index.
Also, setting the sitemap to No Index does not, in any manner prevent, the sitemaps from getting crawled by the search engine bots.

I checked the screenshot you shared with us and I can see that Google is displaying “Crawl Allowed? to Yes” which means Google can crawl your sitemap and index new pages when it finds them.

5xx errors are usually caused due to server misconfiguration or other server issues.
Could you please share the error log with us? Having the error log file will give us an idea as to what could be causing this issue.

Alternatively, you can ask your web host, and they should be able to help you locate the log files.
Please also ask if your website’s PHP values are not too low to handle the processes. Here’s a list of recommended PHP values for your reference:
PHP Memory Limit: 512M
Max input time: 150
PHP time limit: 120
PHP max input variables: 1000
