I looked at your sitemap and noticed, the content type is text/html, using the sitemap validator:https://www.xml-sitemaps.com/validate-xml-sitemap.html, and the postman tool.
Please follow the steps below, to troubleshoot the issue:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server.
For plugins or Cloudflare, please follow this article:

After that, I’d request you to remove all the sitemaps from GSC, and submit the primary sitemap (https://yourdomain.com/sitemap_index.xml). Please remember to replace “yourdomain.com” with the name of your domain.

I tested and the Text/HTML error pointed by my colleague is already fixed now.
The URL of Rank Math’s index sitemap is /sitemap_index.xml. The sitemap.xml is redirecting to the homepage since you’ve set the Fallback Behaviour to the Homepage from Rank Math > General Settings > Redirections.
However, to fix this, I’ve set up a simple redirection from sitemap.xml to sitemap_index.xml on your website (under Rank Math > Redirections) and the URL is now redirecting properly.
Please clear your website and browser’s cache and see if the redirection is working properly on your end.

Problem is fixed now, however, I am unable to understand which action has fixed this issue i.e. rewriting rules, .htaccess setting, removal and re-addition of sitemap in GSC etc.
Please let me know so that I can fix similar issue if faced in future.

Regarding the redirection, there was no issue as our sitemap lies on the URL /sitemap_index.xml, and accessing it on a URL other than that would redirect to the Fallback Behaviour.
To fix this, I created a redirection under Rank Math > Redirections, which redirected the URL /sitemap.xml to /sitemap_index.xml and the URL is now redirecting properly.
So, if any bot looks for the sitemap on /sitemap.xml, they would be able to access Rank Math sitemaps.
Here’s a screenshot of the redirection that I created:

However, all the steps that you performed are valid troubleshooting steps, that is, the sitemaps should be excluded from caching and after doing that, they should be removed and added again to GSC to allow Google to see a cache free sitemap.
