Thanks for providing the login details.
I checked your sitemaps and I was able to replicate the issue. So, I logged into your WordPress admin area and performed the troubleshooting, the sitemap still gives the 500 error when all the plugins are disabled and a default WordPress theme is enabled (I checked this using the Health Check plugin).
I noticed that the sitemaps were not excluded from your caching plugin (WP Rocket), so I excluded them and cleared the cache, but the issue persists.
I suggest you get in touch with your web host as they would be in a better position to fix the error.
