I checked a few posts on your website and I noticed that the featured images are not of the recommended dimensions and hence the default image is getting picked.
For example, the dimensions of the featured image in the post /men-perfume-samples-fragrance-designer-choose-your-own-combined-shipping-2 are 680px X 326px whereas the recommended dimensions are 1200px X 630px.
You can have a look at the screenshot in the sensitive data section of this ticket for a quick reference.
Please use an image of the recommended dimensions and see if the issue gets fixed.
Just to mention, other than the featured image, you can also separately set the social image for each post/page/CPT. Please refer to this guide for more details: https://rankmath.com/kb/meta-box-social-tab/
