Rank Math does not add the post date to the post meta, this value exists on your theme/frontend of the website.
Google won’t give a definitive, single answer for how they pick a date. There are several ways through which Google picks the date to be shown in the search results.

When Google lastly crawled your website, the update/publish date was not available on the page. You can check this with the URL in the sensitive data section of this ticket.
I suggest you clear your website’s cache and wait for Google to crawl your website again and see if that updates the data on the search results.

Thank you for your reply.
I actually just added the update date to my page a couple minutes before you visited my page! I am trying to use that hoping that Google may take that date instead.
