If you don’t want to index those pages on Google, you can simply set them to Noindex. Here’s how you can set any page to Noindex using Rank Math: https://rankmath.com/kb/how-to-noindex-urls/
After that, Rank Math will also remove them from the sitemap.
Regarding another sitemap, unfortunately, it is not possible. Rank Math generates your sitemap at /sitemap_index.xml. You can add sub-sitemaps to this based on your post type, but we don’t have an option to create another sitemap.
