To add the SEO Meta Box on Custom Post Type.
Go to Rank Math > Titles & Meta > Your Custom Post Type > Enable Add SEO Controls
Do note that some options are only available when you enable the Advanced Mode in the Rank Math dashboard:

Yes, you may need to input there your custom fields names for Rank Math’s content analysis to read them.
Rank Math will look for the data inside these posts and include them for on-page SEO analysis to give you more relevant on-page SEO recommendations.
