Thank you for the update, and apologies for the delay.
To modify your product categories meta title and description individually, head over to Rank Math > Titles & Meta > Product: Product categories and enable the Add SEO Meta Box option
Once done, you should see the option to change the metadata upon editing your product categories page.
Please note that some options are only available when you enable the Advanced Mode in Rank Math. If it’s not showing, you must have chosen to use the Easy Mode. Please follow the steps in this link to switch to Advanced Mode:

In case you wish to remove the Categories not to be indexed you need to access the global settings under titles and meta. Then make sure that you go to the taxonomy for categories and ensure that you check noindex under Category Archives Robots Meta. See screenshot here: https://i.rankmath.com/LEy4go
