Google takes the featured image from the featured image you set in your post. Unfortunately, we don’t have any control over how SERP results are displayed, and Google displays them as per their will.
Also, Rank Math adds it to the page Schema, so it increases your odds to display it (so maybe in a few days, it will be shown there).
