It may take some time for Rank Math to download data from your search console and thus I can advise that you give this a bit of more time or your could head over to Rank Math > General Settings and click on the Update cache manually button.
Additionally, please note that this option will not be available if you verified your site using the DNS / TXT method.

Yes you can try a different verification method and let us know how this goes.
Since all versions are already verified, it does not really matter the one that you use on the Rank Math search console module.
