By default, the schema markup is disabled to product categories. However, you can edit your schema by disabling the Remove Snippet Data in Rank Math > Titles & Meta > Product: Product Categories

Please note that some options are only available when you enable the Advanced Mode in Rank Math. If it’s not showing, you must have chosen to use the Easy Mode. Please follow the steps in this link to switch to Advanced Mode:

Could you please head over to Rank Math > Status & Tools > Database Tools and click the Remove transients button? Once done please clear your website’s cache and check again your product category page.
If the issue still persists, we might need to take a closer look at the settings. Please edit the first post on this ticket and include your WordPress & FTP logins in the designated Sensitive Data section.
