Please note that the Website schema is used a container for other items eg it is used to hold a ‘potentialAction’ on the homepage and this would not have any benefit on single posts.

The correct SEO title is displayed on on the HTML source code and this is nothing to worry about. Google sometimes does not honor your titles and displays them as per their will.

Specifically, you might want to check the title Why the search result title might differ from the page's <title> tag
