Unfortunately, multiple schemas are only available for the PRO subscription. But since you mentioned that your client was able to add multiple schemas, I am assuming your client is using the PRO version. Can you please confirm? If so, I suggest you create a new ticket using the PRO account so we can further support you.
With that said, in the Free account, even if you have a default schema chosen in the Titles & Meta settings, only 1 schema will still be added to your posts/pages. You would need the PRO version to create multiple schemas with Rank Math.

Hello,
The titles & meta settings only allow you to select a default Schema type for your post types. You can’t select multiple default Schemas. However, you can create Schema templates and use the display conditions to apply multiple Schema in bulk to the post types. Here is a guide that can help: https://rankmath.com/kb/schema-templates/
