The errors are coming up because the product included have some optional fields missing.
You can get rid of the errors by enabling the option to remove snippets in Rank math > Titles & Metas > Product Categories.

You don’t need the schema about each Product on the product categories, since the Product schema is used by Google to display information about that specific product, so it is only relevant on single product pages.
So your SEO will be fine, even when disabling it.
