The Rank Math plugin will only allow one rich snippet type for each page since this is what Google expects. I would suggest that you pick the one that most describes your business and run with it.
Google also expects a rating value and rating count for the service schema but this will be populated once your customers review your services.

I think I did it during the setup.
So maybe it’s not available in specific page option because it’s already this by default ? unless I want to change ?

You have to choose to display that information on your contact page or about page or both.
Then it will work properly.
