Could this be due to NOT toggling on the “lock modified date” button that appears on individual posts? All posts scheduled did NOT have that turned on.

It appears that the section on the front-end is fetching the date from the date-modified variable (this probably has to do with how your theme developers designed the theme to work).
The post’s date modified and date published are different variables. While the published date is expected to be constant, the last modified date is updated whenever a change is made to the page/post.
