Can you please try remove the sitemaps from the Search Console and resubmit the sitemap_index.xml to see if that works for you?
You may also ask Google to re-crawl the affected URLs:
https://developers.google.com/search/docs/crawling-indexing/ask-google-to-recrawl

The lower number in Discovered URLs in Google Search Console just means that the URLs in the sitemap were already found by Googlebot by other means, instead of via the sitemap.
