You can use different languages on the values, but for the default words of properties like id, URL, itemlist, etc. should be in English.
You should fill in the fields in the language of the post that you applying the Schema to.
We don’t handle the translations of Schema automatically and that needs to be handled either manually or by a translation plugin such as WPML.
Another thing to note is that the Schema properties will always be in English as that is required to comply with the guidelines but the content of those properties can be in any language you want.
For example, the headline is a property in the Article Schema but the content of that property can be in any language, you just can’t translate the word headline as that is the property name and it needs to be in English.
