I use the latest versions (WP & RM) and it happened with me in the new WP block editor.
To replicate the issue:
- Add a link in the editor, switch the block to HTML view, add a class to the
a tag e.g. <a href="https://example.com" class="btn">Visit</a>.
- Switch the block back to visual view, now edit the link on the fly and change anything (URL, nofollow, open in new window) and save.
- Now, the existing class
btn will be removed and the link will look like this <a href="https://example.com" target="_blank" class="rank-math-link">Visit</a>.
Simply, add a CSS class to any link and edit the existing link, you’ll find that all existing classes added by you are removed and replaced with this class rank-math-link.

So it seems you didn’t found a Rank Math bug but a WordPress bug.
