This option is working normally on your site.
Please note that the strip category option will only be activated when viewing the posts that are assigned to the category and not when viewing the child category pages.
I would be happy to pass this on to our developers as a feature request so that this can be considered for addition in our development roadmap.

Thanks. Then I’m not even sure I understand the purpose of the strip category setting? Why would you ever need to use this setting, because you can just set your permalink structure to post name without the category name. That is a standard wordpress feature. What does the strip category button do that the standard wordpress permalink setting doesn’t do?

Thanks for the question.
The Rank Math strip category option works more efficiently since it does not modify the links that are saved in the database. This will avoid broken links and loss in traffic since modifying the permalink structure breaks URLs that were using the former structure.

so what is google indexing? with or without the category hierarchy?

Google will index whatever is viewable on your website.
Please note that the strip category base option converts links like this:
domain.com/category/art-gallery-of-ontario/
to
domain.com/art-gallery-of-ontario/
Please let me in that is confusing or not what you expect it to do.

This feature is only available on category archive URLs, for example this is how one of your category archives looks like when this feature is disabled:

and this is how this looks when the strip category option is enabled:
