You’re seeing the button gray because Astra has added support for our Breadcrumbs and that’s why you can’t change the breadcrumbs option of our plugin. The breadcrumbs are already enabled and are to be handled by the theme.
However, if you want to remove the add_theme_support( 'rank-math-breadcrumbs' ); from your setup, you may simply remove that code from the files:

It looks like the Astra theme has integrated RankMath breadcrumbs, which is why the toggle switch is locked.
