If the dates are not showing in the search console then you would have to check on your GSC settings

Is it necessary to registrate my website after changning from YoastSEO to RankMath again?

No, you do not have to re-register your website again with Google if you had already done that.

With Rank Math, you just have to make sure you connect the site with your analytics using the Rank Math plugin. This can also be used as a verification process. See the guide here: https://rankmath.com/kb/connect-your-google-account/

What I not see is “only” datas of visits.

Please make sure that you connect your site here with your analytics account using Rank Math. If you are not using another plugin to do the tracking of your visits, make sure the option to install analytics is turned on as shown: https://i.rankmath.com/iLDSuj
