The most possible reason can be that your sitemap is heavily cached. Can you please try following the steps below to see if that works for you?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. If the above steps doesn’t seem to work, kindly apply the following filter code to your site.
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

The issue is coming from the invalid images, which is why the sitemap is loading fine after you disable the “Images in Sitemap” option. You need to ensure that these images don’t have invalid parameters when they are included in the XML sitemap.
You may check if you are using a plugin to include those images or you to troubleshoot this further, you may follow this guide: https://rankmath.com/kb/check-plugin-conflicts/
Only the site admin would know and your users won’t be affected by this troubleshooting.
If the issue persists from your end, kindly include your WP admin and FTP login in the sensitive data section.
