Unfortunately, Rank Math can only detect ACF when installed as a standalone plugin but not when the plugin is bundled in a theme or another plugin.
You can fix this by installing ACF as a standalone plugin.

Hi Dan, ACF is bundled within Flexthemes so there is no need to install it. Also, Rank Math will only read the content from standard blocks not flex blocks. I hope this helps.

Please note that there are certain limitations with what SEO plugins like Rank Math can see. We, like most other SEO plugins, check what is present on the backend since we know most of the optimization happens before you actually publish content.
Some of the online tools work only once you have already published your content so you need to do your optimization after publishing. It is a bit of a trade-off that only you can decide if it is worth it.
As for Google, they see everything you see in your browser when your content is published.
