so if I want to track a keyword in the UK how do I do that ?

All the data that is shown in the Rank Tracker is coming from Google, so this will depend on how you have set it up in our plugin.
You can set up your Analytics in Rank Math > General Settings > Analytics and select United Kingdom in this section
