I have successfully created a new post on your site here without any of the issues on your screen recording(link on the sensitive data section). Please ensure that you are running at least PHP 7.2 on your site for Gutenberg to play nicely with all your installed plugins.

This issue could also be related to your computer environment. I have done several tests with the steps on your video but I cannot reproduce this issue.
Please test this out from another PC to rule out browser conflicts.
