Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/

I checked the source of the post that is missing from the sitemaps and I found that the post is missing a /
(slash) at the end in the canonical URL.

Could you confirm if you have added a custom canonical URL to this post? If yes, then please remove the custom canonical URL and see if that fixes the issue. Posts with custom canonical URLs are not included in the sitemaps.
Rank Math automatically includes the current URL as the canonical URL. So, unless you have to add a different canonical URL, you can leave that field empty.
