This does not usually affect the individual posts/pages, the meta data such as title & description, seo score and indexing will still remain. It only sets the default settings in Rank math.
You can go through the setup wizard again, just head over to Rank math dashboard > Setup Wizard.

Under general settings I can’t find any option apart from “Open External Links in New Tab/Window”

Please note that some options are only available when you enable the Advanced Mode in Rank Math. We give you an option to choose between the two during the setup wizard and you must have chosen to use the Easy Mode.
You can switch to the Advanced Mode from the top-right corner at WordPress Dashboard > Rank Math > Dashboard

I have checked it and your robots (metas and the file) and fine, your sitemaps seem fine (they are working fine here: https://www.xml-sitemaps.com/validate-xml-sitemap.html) and you have your content being indexed: https://i.rankmath.com/huEJXs so I think it is a false positive and it will be automatically solved in a few days.

If I use another plugin to generate my XML sitemap, GSC result always show indexed and submitted sitemap, these issue of indexed not submitted in sitemap by Google search console always occur wen I use rank math to generate my sitemap.. Why is it so

If you already had previously indexed those URLs (as it could be since you used another plugin to generate the sitemaps), Google has already indexed them so it doesn’t need to index them again using the sitemap.
