Please check if you have clicked the star icon as it will unpin the Rank Math from the toolbar

Also, ensure that the Rank Math option is enabled in the block editor options

If those are still missing, assuming you are using the latest version of all the plugins and the themes (please update if not yet), this could be caused by conflicting plugins/theme on your site.
