You can select any property from the dropdown.
sc-domain is the domain property, a domain-level property includes all subdomains (m, www, and so on) and multiple protocols (HTTP, HTTPS)
The URL prefix includes only URLs with the specified prefix, including the protocol (HTTP/HTTPS).

I alrady had selected https://domain.com
But,
During account setup with Google Analytics and Google search console I had setup with domain.com only.
My question is;
Is this alright to setup https://domain.com with Rankmath?
Will this also effect my site?
And, should I reverse back to domain.com version in Rank Math from https version as I had selected domain version only with Analytics and search console?
I re-checked, you cannot use just domain without HTTP or HTTPS with google analytics.
Still, I have the above query, I want to know what should I do in that situation?
Google analytics has- https://domain.com
Google Search console- domain.com
Rankmath- https://domain.com

The property/account dropdown fields take the data directly from your Google Search Console and Google Analytics accounts.
Please double-check the properties in your Google Search Console account and select the one that is your preferred version.
Also, you can remove all the properties other than the preferred property, from your Google Search Console account.
Once done, please reconnect the Analytics account, to regenerate the auth token from Google, by going to WordPress Dashboard > Rank Math > General Settings > Analytics and configure the Analytics settings:
Once the account would be reconnected, the preferred property would be shown in the dropdown field.
