About the issue, assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.

Deactivating each plugin didn’t make a difference. Could it be that Yoast SEO didn’t fully get removed?

In Rank Math, I have the products set to index, but they are showing on google as no index. Could it be that yoast seo didn’t complete get uninstalled?
Problem solved. The plugin that was causing issues was WooCommerce Show Single Variations by Iconic. I needed to run the indexer to ensure the parent product was showing in search results, while also being hidden from the shop page. Thanks for your help. This is now resolved.
