I’ve checked the product tag pages, and indeed the variable is not included in the title meta tag.
For initial troubleshooting, please check if there is a plugin/theme conflict on your site. Assuming you are using the latest version of all the plugins and the themes (please update if not yet), to determine that, please follow this troubleshooting guide:

Only the site admin would know and your users won’t be affected by this troubleshooting.

Please do take a complete backup of your website before sharing the information with us.

I’ve checked the tag on your screencast, and you have set a custom title for that, that’s why the variable is not showing. Please refer to the edit link and screenshot in the sensitive data section.
Please note that the settings in Rank Math > Titles & Meta only apply as a default. So, you may need to remove the title upon editing the tag and the default title should be applied as well.
