Since the page is a Category archive, the Schema needs to be disabled there. Please head over to Rank Math > Titles & Meta > Product: Categories and enable the “Remove Snippet Data”:

Yes, Google recommends disabling the schema to your product category archives. The Product Schema is only for the actual product, and not for anything else. You can check this link for more information:

Please note that some options are only available when you enable the Advanced Mode in Rank Math. If it’s not showing, you must have chosen to use the Easy Mode. Please follow the steps in this link to switch to Advanced Mode:

If you still wanted to have a product schema on your product category pages, you will have to ignore these warnings in Google’s Rich Results test

The aggregateRating and review fields are picked up from your actual product reviews that your buyers/customers leave on your products. So if you are using WooCommerce Product Schema, then you need to acquire some reviews on your product in order to fix this automatically.
However, if you’re good with coding, it is possible to extend the schema already provided by Rank Math by customizing this filter:

Please note that we don’t offer code/filter customization given our small team. If you’re not a developer, you may need to hire a developer to assist you.
