Unlike posts/pages/products, it’s not possible to optimize the category or product category archives much. You can only edit the title and the meta description so it doesn’t make much sense to optimize such a short piece of content.

As a owner of a few ecommerce stores I can say that product category pages are one of the best ways to rank for keywords.
This is because typically products have a specific name and you don’t want each product to be competing on the keyword.
But with a product category page you can try and rank for the umbrella term with the added benefit of when people land on that page your products are listed.
I would definitely recommend that rank math look to support more features on these archive pages as they differ from blog category pages for example.
