You seem to have modified your product category canonical from https:/**/kategori/bandager/kinesiotape/ to https://**/kategori/kinesiotape/. Rank math understands pages/posts with user-defined canonical as duplicate pages and therefore they are not added to the sitemap. You will need to remove the custom canonical to have your page added to the sitemap.

For some reason I’m being told that the site, mentioned in the Sensitive Data is not included within the sitemap due to URL changes. I assume this is a Rank math setting?

The process shown in the screencast is the same even for categories.
Just head to your category page and click on edit then remove the custom canonical URL in Rank math metabox under the advanced tab. If you are not certain, we can change it for you. Edit the first post on this ticket and include your WP logins in the designated Sensitive Data section.
It is completely secure and only our support staff has access to that section. If you want, you can use the below plugin to generate a temporary login URL to your website and share that with us instead:

You can use the above plugin in conjunction with the WP Security Audit Log to monitor what changes our staff might make on your website (if any):
