    would like to have a better control of categories, one post may belong to several categories and subcategories

    What you seem to want it something more related to advanced permalinks, so I think you should try to achieve it using a plugin designed for that. For example, I saw a similar question on a plugin you might use: https://wordpress.org/support/topic/only-show-last-sub-category-in-permalink/
