We’ve turned off any product schema from showing until we have correctly configured to show what we want.
The site has good traffic, and it’s been 4 weeks since we made these changes.
Is there anything we can flush / rebuild within wp admin? so the schema can be rebuilt?

You can follow this troubleshooting guide to check which plugin is adding this schema and then you can remove it:
