Also, when I input HTML in the separator field, it prints that HTML on the frontend.
So:

Becomes HTML-encoded stuff:
<div class="between"><i class="fa fa-chevron-right"></i></div>
How can i prevent this from happening?

Thank you for contacting the support and we regret the inconvenience caused.
Those fields accept values as strings and instead of executing them on the frontend, they simply show/print the added values.
To add custom HTML to the breadcrumbs, you can modify and use this filter: https://rankmath.com/kb/filters-hooks-api-developer/#change-breadcrumb-html
