It seems you do not have sufficient server resources which seems to become an issue when links per sitemap is set to 10000. This is what is causing your sitemap to end up with 500 error.
In such cases when the higher limit isn’t working due to server restrictions – we recommend lowering the limit. With this in mind, I reduced the links per sitemap to 200 in Rank math > Sitemap settings and now your post-sitemap seems to be valid when tested here: https://www.xml-sitemaps.com/validate-xml-sitemap.html
Please resubmit your sitemap on GSC( only the main sitemap_index). I believe that should fix your issue.
P.S: I did deactivate the other sitemap index plugin to avoid probable conflicts.
