I’m not sure whether I fully understand the question. Could you please describe the first issue that you are facing?
Regarding the canonical tag, I checked the page’s source and I found that the page is set to No Index.

Canonical tags are added to only those pages, which are Indexible (Set to Index). So, you can set the page to Index to add the Canonical tag in the page’s source.

Thank you for the update, and apologies for the delay.
From your screenshots, it seems that you are using the %excerpt% variable for your meta description. That variable will automatically gets the first 160 characters on your paragraph. You cannot edit that part out in the preview section since it captures the actual content you have. If you want to edit it, you will need to edit the content itself.
