I tried to check your site but it seems to be currently under maintenance. The canonical URL seems to appear in a very unexpected way. Have you edited it by any means ? You can try changing it to the correct canonical and let us know if this resolves the issue.

No I didn´t edited it at all. I can go ans copy it in the field, but it does not allow me to edit it.
It´s very interesting that at each translated category is the same kind of canonical URL, and the original English ones are OK.
What shall I do?
I just changed one of the canonical URL-s manually, but as it looks like it does come from somewhere else, as you can see it appears still in the preview with that crazy link.
What shall I do now? Do you have any idea?

I have found the real error in the redirection the source URL was not right…no idea where it comes from, but the middle of the German categories URL was in English.
for example:
de/product-category/schmuck/armbander instead of:
de/produkt-kategorie/schmuck/armbander
I corrected them manually, but it would be great to have it right automatically.
is there any chance to correct it in the plugin?

You could set up a redirection with Regex or “Contain”, for example in Regex, your origin URL would follow this pattern:
(.*)product-category(.*)
And it should redirect to:
$1produkt-kategorie$2

Thank you for the follow up.
We cant really determine the cause of this without having to take closer look at your settings. However, the most likely cause can be your permalink settings. You can head over to WordPress Dashboard > Settings > Permalinks and check your settings for product categories.
The regex redirect my colleague recommended would redirect your product-category URLs to produkt-kategorie. An example, exampleURL.com/product-category/something
would be redirected to exampleURL.com/produkt-kategorie/something
