We have been working on a fix and we have a solution. Since we cannot replicate this issue ourself, we request you to update to the below version of Rank Math by doing the following:
1. Remove Rank Math from WP > Plugins. Don’t worry, all your settings are safe in your database and they will return once you upload the below version.
2. Install this version of Rank Math on your website by uploading it from WP > Plugins > Add New.

3. Activate the Rank Math plugin after it is done uploading.
4. Go to WordPress Dashboard > Rank Math > Dashboard > Help
Connect to your Rank Math account.
5. Go to WordPress Dashboard > Rank Math > General Settings > Search Console
Re-Authorize your Google Search Console.
That’s it. The issue should not come back.

I checked this morning and plugin updated itself again.
So I installed the version you sent, connected to Rank Math and when tried to connect to GSC will authorize the account but no profile to select in the dropdown.
Still, when I check Search Console page from RankMath it seems to be working, showing the numbers.

I am glad one of the issues is fixed.
Please make sure that you have verified the correct version of your website on the Google Search Console (http or https, www or non-www).
Then, please make sure that the Google account you used to connect your Google Search Console profile is the same one you have used to verify your domain on GSC.
If it still doesn’t work, we have found that using a different Google account to verify your domain and connect your website usually works. Or, you can try using the Google Site Kit if it still won’t work and disable the Search Console inside Rank Math by going to WordPress Dashboard > Rank Math > Dashboard

Website was verified as a property, through DNS, so it covers all versions. And the profile become available when using the old version of the plugin, so it’s not an issue related to GSC verification/connection.

Google Site Kit is known for increasing the loading time of websites, so I won’t use it just to get the GSC data.
If you could find a way to block the plugin auto-update, I’d be more than happy to rollback to 1.0.42.3 and stay with it, it’s the only version fully functional for me.

Please do the follow to prevent auto update:
1. Rollback to 1.0.44 from WordPress Dashboard > Rank Math > Status & Tools > Import & Export:

2. That will prevent auto-updates.
3. Then, delete Rank Math and install 1.0.42.3
manually.
That should do the trick.
With that said, Rank Math’s Search Console module pulls the data from your GSC and stores in your database. So, if preventing that is your sole purpose behind not using Site Kit – we cannot offer you much relief there. However, you can control how much data you get to store from WordPress Dashboard > Rank Math > General Settings > Search Console

Well, that last for one day. Again, plugin auto-updated so I’m back at the start.
It’s the first time when I have this problem with a plugin and it seems you can’t find a solution for it. I spent enough time on it, it’s time to switch back to another plugin, a more reliable one.
