Assuming you’re referring to the Analytics/Search Console settings, the country list for Analytics and Search Console comes directly from Google’s APIs.
Unfortunately, Nepal is present in Google Search Console and Google Analytics but not on the API. That is the reason it is not shown in the Analytics settings.
With that said, when Google would add support to Nepal in the API, the dropdown in Rank Math will be updated automatically.
