Could you please check the following:
Have you verified the correct version of your website on Google? Please check if you have verified the www (or non-www) and https (or http) version of your website. If there is a mismatch, please fix that.
Also ensure you have only submitted only the main sitemap to your GSC and give it sometime to crawl
If you have followed these and you are able to view your sitemap without any problem, then Rank Math is outputting your sitemap correctly and the issue must be coming from Google. You can try and use a 3rd party sitemap plugin to confirm. Just make sure you have disabled the Sitemap module of Rank Math in WordPress Dashboard > Rank Math > Dashboard when using a 3rd party sitemap plugin.
If the other plugin works, please do let us know.

Thanks for your reply.
Yes, I made sure the www. vs non-www. and https/http matter was correct, and it is.
I also took away all the other sitemaps and left only the main sitemap.
It is a bit strange, because I have checked back inside GSC every now and then for the last week and sometimes it says “indexed, not submitted to sitemap” while just 30 minutes later it says “Indexed and submitted”, only to go back to “…, not submitted to sitemap” again…. So it bounces from looking OK to looking like something is wrong, back and forth.
Does that say anything to you? Does it mean that Google maybe have some issues with stability at the moment or does it sound like the problem is in the sitemap generated by RankMath?
Maybe other clients of yours experienced the same issue recently?

Could you please manually check if the post is part of the sitemap?
If it is already included in the sitemap, then it is just a matter of time before Google sees the updated sitemap and see the URL present there as well.
There is nothing you need to do for now then just wait. This does not affect your SEO or rankings in any way.

I have checked back inside my GSC account every now and then for the last 10 days or so, and it seems like the problem is fixed now.
I took away all the other sitemaps and left only the main one (as suggested by Michael above) and at least for now everything seems OK.
