Please note that the sitemaps, by default are set to noindex as you do not want them to appear in the search results. The sitemaps should only be submitted in the sitemaps section in the search console.
I checked the sitemap, it is working fine:

Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
Once done, clear the website cache, remove all the sitemaps from the Search Console and add only sitemap_index.xml.

I have followed these steps but the Google Search Console is still saying
Sitemap could not be read. It appears that the page and post sitemaps have an error highlighted as a General HTTP error 1 instance.

Please head over to your WordPress admin area and go to Settings > Permalinks and hit the “Save Changes” button once even if you didn’t make any changes on the page.
This should fix the issue.

I have saved on permalinks. I have deleted sitemap from Google Search Console and then added again. It still says “could not fetch”. When I drill down the category sitemap and elementor-hf-sitemap are read but the page and post sitemap xml’s are showing 1 error.
Please advise.

I’ve checked your site, and it seems that you haven’t verified the www version of your website to be redirected to the non-www.

Please ensure that only 1 version of the sitemap is working (200 Ok status), and the rest are redirecting to it. You can also use this tool to check.
You can follow the steps in this link to redirect your www version of your site:

Once done, remove all the sitemaps submitted in your Google Search Console and resubmit your main sitemap.
